Notes about our Sugar Free Candy:

We use a natural sugar free alternative called Isomalt to sweeten our candies. Isomalt is made in Germany from NON GMO Beets. It doen't have a chemical or minty aftertaste - in fact, we don't think there is any aftertaste at all!

Isomalt was originally developed for sugar and pastry arts because is doesn't crystallize at high temperatures. Eventually, foodies and nutritionists realized it is safe for diabetics with its incredibly low Glycemic Index of 2 (glucose is 100)

Isomalt falls into the category of sugar alcohols - It doesn't cause dental decay, and it behaves like a fibre instead of a sugar when it is digested (some nutritionists recommend to subtract the polyalcohol line from the carbohydrate line to get "net carbs", others recommend subtracting half of the polyalcohol line from the carbohydrate line to get "net carbs". Ultimately, it depends on how well you digest Isomalt!

We recommend eating less than 25g of isomalt per day. If you've never had a candy with Isomalt before, try having just half the bar at first, then the other half later. We also recommend only to eat sugar free candies after eating a meal, not on an empty stomach.

Here is a chart to compare Isomalt's Glycemic Index to other popular sugar free substitutes:

"Isomalt is a naturally sourced sugar replacer and the only one in its kind made from pure beet sugar. On top, it is 100% sugar-free and even helps to prevent tooth decay. Thanks to a two-stage production process of enzymatic sucrose treatment and hydrogenation, the resulting unique molecular structure gives our Isomalt a sweetening profile almost equal to sucrose – but with half the calories! While used in many food applications, Isomalt is the number one sugar replacer worldwide in hard candies."

"Tests at the Sydney University Glycemic Index Research Service (SUGIRS) have verified that the sugar replacer Isomalt from Palatinit has a very low glycemic index (GI). With a value of 2, Isomalt belongs to the group of carbohydrates that may be recommended for frequent consumption. According to the company, using Isomalt as a sweetener instead of sugar can significantly reduce the GI of products such as bakery, ice cream, cereal and fruit bars or jam. Isomalt’s low GI is due to the stability of its molecular bonds. Isomalt is manufactured from pure beet sugar in a two-stage process. This processing rearranges and stabilizes the molecular bonds. As a result, neither plaque bacteria in the mouth nor digestion in the small intestine are able to break down Isomalt completely. This means that teeth are protected and at the same time calories cut back and the blood glucose level remains virtually constant."
